Homemade Breakfast "Sausage" Patties

I love anything to do with breakfast or brunch...or second breakfast or even elevensies for that matter! Luckily, I now don't have to miss out on the admittedly delicious flavors of breakfast sausage just because of eating vegan!! I present to you Homemade Vegan Breakfast Sausage Patties! Below, they are pictured served with scrambled tofu and roasted potatoes!! And of course some Peanut Butter Cinnamon Rolls from RRF's blog www.bjorkedoff.blogspot.com!!
Breakfast "Sausage" Patties (serves ~12)
6 cups ground seitan
1 can black eyed peas, drained
1/4 cup olive oil
2 Tbs arrowroot powder whisked with 2 Tbs water
1/2 tsp liquid smoke
1 Tbs vegan Worcestershire sauce
1 Tbs soy sauce
2 Tbs maple syrup
2 Tbs brown sugar
1/2 tsp salt
1 tsp black pepper
1/2 Tbs paprika
2 Tbs dried sage
1 Tbs fennel seeds
1/2 tsp nutmeg
1 tsp dried thyme
1/2 Tbs dried basil
1 pinch cayenne pepper, or to taste
1/2 Tbs cumin
1/4 tsp chili flakes
1/2 cup whole wheat flour
1/4 cup tahini

Preheat oven to 350 F. Lightly grease 2 sheet pans.
In a large bowl, add together all of the ingredients and mix well--works best to mix with your hands--until well combined. Form dough into patties using 1/2 cup scoops. Shape patties about 3" in diameter and 1/2" thickness. Place onto oiled sheet pans and bake for 30 minutes. Let rest on pans for at least 15-20 minutes.
If using later, place into airtight containers and freeze until later use.
When ready to serve or if serving immediately, heat about 1 Tbs oil in a skillet over medium heat. Place pre-baked patties onto heated skillet and pan fry about 2 minutes on each side, until lightly browned and warmed through. Serve hot and enjoy!!

A Brunch-y Ode to Winter

I love brunch. And I love winter and wintertime treats. This brunch was a beautiful marriage of these loves of mine!! I served it a few weeks ago at my Saturday supper club, and the crowd was oh so pleased!

Pumpkin Bread French Toast with Candied Pecans and Cinnamon-Infused Maple Syrup.
Apple-Sage Seitan Sausages.And doughnuts!!! Served fresh and warm with some delicious coffee, and you are having a great day for sure!

Homemade Jelly Doughnuts filled with Blackberry Jam, topped with a Vanilla Glaze and Homemade Granola!!!!! Deep-fried, comfort food heaven.Ooey Gooey. I never thought I would ever have a jelly doughnut again after going vegan. I'm so glad I was wrong!!

Chorizo Spinach Sopes!

This Vegan Latina tester gig gets better with every recipe I make!! Today's test recipe from Terry Hope Romero's Vegan Latina tester forum is the Chorizo Spinach Sopes! They are plump, bowl-shaped cousins of corn tortillas filled with lots of Latina goodies...I managed to knock out a few other tester recipes to make this one! score! The filling consists of layers of: spinach sauteed with garlic and lime, Seitan Chorizo Sausages (a test recipe), shredded cabbage, red onions, Classic Roasted Tomatillo Salsa (another tester, for which I used some local tomatillos!), and some Vegan Chipotle Mayo (I had some of this leftover from the tortas a few days ago). Absolutely perfect! So many different flavors layered together in this amazing little shell and it all just works magically with each other! I think next time I will add some avocado, just to make it just that more perfect!! Ole!

Alfredooooooooo! I've missed you!

I am in a veeeerry good mood after my dinner tonight! I made Vegan Alfredo Sauce over Local Sweet Potato Pasta, with Sauteed Kale and Homemade Italian Sausages!!! This meal is exciting for a number of reasons!! I think they will make you happy, too!
1) The Italian Sausage is homemade, for my DIY post this week. Homemade sausages are sooooo much better than store-bought, and a whole lot cheaper! I must admit, I do love a Tofurkey Beer Brat or Field Roast Apple-Sage Sausage when I am feeling lazy, but it is realy worth the effort to make my own! Did I mention that it's cheaper?! I used Julie Hasson's famous steamed sausage recipe from the Everyday Dish site. These are so good! I should have made a ton of them and frozen them for later use....maybe next time. 2) I finally got to have Alfredo Sauce! I haven't had any alfredo-type sauce since going vegan, which is about three years now! I know, I know, there are tons of vegan alfredo recipes out there. I just never remembered to make them, really! Soooo, with the help of some PPK'ers, I found Lachesis' Vegan Alfredo recipe on the PPK forums, and it is so wonderful! Another DIY part of this meal...homemade sauces kick the crap out of store-bought sauces. This is a fact. Decadent, yes, but we could all use a little extra fat in our meals now and again! Oh goodness this was so flavorful and creamy and just like I remembered alfredo sauce being in my pregan days! JOY!!!3) I used the local Sweet Potato Pasta from Pappardelle's, a local pasta-maker here in KC. And I loved it! The sweet potato flavor wasn't too strong, but definetely there! Thanks farmer's market! :)4) This was a healthy and complete meal, pretty quick and easy to make, and it tasted amazing...what's not to love?!??!

Which Came First...The Biscuit or The Gravy?

I celebrated my first morning of spring break (my last one ever!) with making a delicious tester recipe for Bianca's Cookin' Crunk cookbook....Whole Wheat Butter(Soy)milk Biscuits with Sausage-Sage Gravy!! This is what breakfast is supposed to be, folks. Warm and comforting and aromatic and filling and yummy. This was worth getting out of bed!
I used Gimme Lean Faux Sausage for the gravy, which has FRESH SAGE in it, and the result was fabulous! I think I will just have to make these tomorrow morning, too!

How could you ever skip breakfast if you had THIS waiting for you???
