This Week in Sustainability...

Yesterday's Sustainability Sunday was a HUGE success! Dane and I both had tons of people come out to our supper clubs, and the KC Vegan Crawl made yet another mark on the midwest! Yay!

At my place for lunch, I made everyone's favorite: Brunch!!

My Lemon-Ginger Scones! A big, big hit! The recipe is here...I highly recommend it. I even got the lemons at the Farmers' Market! For the main event, I served up cakes 'n eggs, vegan-style!! Awesome Whole Grain Pancakes, Scrambled Tofu with Local Greens, and Local Homefries, featuring both yukon gold and sweet potatoes.

To mix it up a bit, I gave my guests a choice of different pancake toppings: Plain (Earth Balance and Maple Syrup), Homemade Pumpkin Butter, Cinnamon-Baked Apples, Chocolate Chips, or, for those with a savory tooth, Spicy Seitan Chorizo!

Here's my plate-- I topped mine with both the pumpkin butter and baked apples, being the little glutton I am. Did I mention ALL the produce and tofu used were local? Well, they were! The savory option: Pancakes topped with homemade Spicy Seitan Chorizo Crumbles, drizzled with agave nectar and sprinkled with sea salt. Holy moly this was one tasty plate o' food!!Then, for dinner at Dane's place: Gumbo and Rice! Food for the working folks, for sure!! Tons of okra, Anasazi beans, tomatoes, garlic and more in a delicious, spicy broth, topped with fluffy white rice. I think all the vegan Southerners would be proud!!And there was homemade bread: Whole Grain and French Baguettes!! BREAD!!And, since no meal is complete sans dessert: Depression Cake!! Dane found a recipe for cake from the Depression era, when things like eggs and milk were scarce...so it was already vegan and tasty and cheap to make! Yes!! He jazzed it up a bit with a Cranberry-Orange Glaze, and it was just too good!
Thanks to everyone who has been coming out to the Vegan Crawl!! Hopefully we'll just keep growing and growing! There will be more delish food to come, ya'll!

Home For the Holidays, Part 1

It can be pretty tough going home for holidays to a non-vegan household. Not only do you have the anxiety of "what will I eat" but you also often have to to deal with the odd looks, comments, questions, etc. from inquisitive (yet loving) relatives. And you thought it was bad answering questions about whom you are dating!! But it doesn't have to be as difficult as it may seem...at least for the food problem! There's a few simple things you can look for in your family's pantry that they already have, which you can throw together and eat!!

For example, we had a family Christmas this weekend, and I was able to make this Holiday Quinoa Salad without getting anything special from the store! Holiday flavors and good nutrition are a combination that's hard to beat! While your parents may not be stocked with quinoa, you could easily substitute rice or any grain for the same tasty creation! This is simply quinoa my mom had, and I added a holiday-spiced teabag to the boiling water to cook with the quinoa. This really added a nice, mild flavor to the quinoa!! When the quinoa cooled, I tossed it with canned mandarin oranges, parsley, toasted almonds, spinach, red onion, and dried cranberries. I made a simple dressing to put on it of dijon mustard, olive oil, maple syrup, apple cider vinegar, and some spices, including chili powder and cinnamon! It was really good and easy, too! I just dug through the cupboards and put random things together that seemed like they would taste good!

There are some easy rules/things to look for when at a family member's house who is non-veg, and you want to whip up some grub to please your tastebuds and possibly even impress your family!
1. Canned fruits and veggies....maybe not your ideal choice at home, but work really well when away! Canned tomatoes are seriously soooo versatile!! Fresh produce is obviously even better, if you can find them, but don't hold your breath :)
2. Dried or canned beans...a staple in kitchens, even of the non-veg variety! Rice and beans, anyone?
3. Dried fruit...essential for snacking, salads, etc. Always at your family member's house who is "trying to eat healthier." When are they just going to go vegan already???!! ha.
4. Nuts or seeds...protein is key for keeping up energy during the stress of the family holiday gatherings! Look for them in peanut butter, too!! Best eaten by the spoonful, of course!
5. Oatmeal....the perfect breakfast in a non-veg house: no cereal labels to stress over, no soy/rice/hemp milk required, easy and quick to make, warm and delish!! Try drizzling with some maple syrup and cinnamon, which pretty much everyone has! mmmm....

See, you too can not starve or stress when you are away from home, in a country bumpkin town, with a bunch of carnivores! hooray!

Here's the whole dinner my veg mom and I made (yes, I am really lucky my mom is veg and goes out of her way to buy me vegan stuff and wants me to cook for her when I come home! she is awesome!!!) The Holiday Quinoa salad from above, Tofurkey roast with stuffing, and Steamed Green Beans with Caramelized Onions. So good!!! God bless Tofurkey, seriously.
I even made a pie for dessert! Pecan Pie (Bryanna's recipe from the Vegan Feast Kitchen). Pecan Pie is the best pie fyi. Best when topped with some Soyatoo whipped topping and a big mug of hot coffee. This is Christmas in a crust. Before I left, my mom requested her favorite breakfast: scrambled tofu! She even went out and bought all the veggies for it! Bonus! This is probably the best scram-fu I've ever made!! It is onion, garlic, red and green bell peppers, mushrooms, spinach, yellow and zucchini squashes, seasoned with Bragg's, hot sauce, turmeric, and salt 'n pepper. Served with whole wheat toast...and black coffee, of course!! I'm glad she requested this, because it was amazing!
For my first night back to my real house in Columbia, I wasn't much in the mood for cooking after having to try and be creative for a few days, so I made an old favorite: Soba Noodles with Veggies, Baked Tofu, and Homemade Peanut Sauce! This dish NEVER fails! perf.
More holiday posts to come!! oh joy! Also, Happy Hanukkah to those celebrating!! :)

Vegan Mofo Day #17: McVegans and Tuno Salad!

Happy Friday and Day 17 of the MoFo! Today was a long and busy day with school and work, but I somehow managed to eat very well!! I have my priorities, I guess!

Breakfast: Egg McVegans, as seen on Broke Ass Vegan!

Lunch: Tu-No Salad Sandwiches. So perfect for a light and yummy lunch!

Tu-No Salad (serves 4ish)
1 15 oz. can garbanzo beans
juice of 1 lemon
1/2 tsp canola oil
1 stalk celery
1 Tbs pickle relish
1/4 cup chopped onion
1 clove minced garlic
1/2 cup chopped fresh parsley
1 Tbs kelp powder
1 tsp dill weed
pinch of salt and pepper
1/4 cup dijon mustard
1/4 cup veganaise
In a medium bowl, combine the garbanzo beans, lemon, mustard, veganaise, and oil. Use a fork to mash the garbs until no whole beans remain.Add in the chopped veggies and mix together until well combined (and all kinda mushed up like tuna salad). Refrigerate for 1 to 2 hours before serving. I recommend putting this on some yummy sourdough bread...mmmmmm!
Dinner: Leftover Apple-Walnut Pancakes, Spinach & Garlic Scrambled Tofu, and Local Sweet Potato Hashbrowns. With lots of maple syrup, duh.

See, even a busy day can be filled with good food!
And you suckas better remember: VOTE on November 4th and give a shout out to OBAMA! :)

Fronch Toast and Cinnamon-Baked Apples. For Dinner!

Today is the 8th day of Vegan MoFo...I can't believe we're in the second week already!
Tonight, Steve and I needed some breakfast for dinner...go figure! I made Fronch Toast from VWAV, using some tasty baguette from Uprise Bakery here in Columbia. I had never made this before, so I wasn't quite used to making this with baguette instead of sliced bread, but it turned out pretty good! Not perfect, but everything's good with lots of maple syrup :) I served it with Scrambled Tofu, with onions, garlic, peppers, spices, local purple cherokee tomatoes (my absolute fav tomatoes! ) and cilantro. Screw you, eggs! Scram'fu will kick your butt! We also had some Cinnamon-Baked Apples, which I based on some baked apples I've had from Germany, to tie it all together. I am almost certain I will still be eating these apples we picked for all of my days. oh well! These are so fall-y and delicious...it's like the filling of apple pie, but quite a bit healthier! I will give you the recipe, I suppose! Cinnamon-Baked Apples (serves 2)
2 medium apples, thinly sliced
1 tsp Earth balance, cut into little cubes
1/4 c raisins
1/4 c chopped yellow onion
1 Tbs cinnamon...or more, if you're naughty
1 tsp nutmeg
dash of cloves
dash of salt
2 Tbs maple syrup
pinch of cayenne

Preheat oven to 350 F. Combine all of the ingredients in an oven-proof pan and bake for 15 minutes. Remove from the oven, stir the apples, and bake for 15 more minutes. Serve over toast or pancakes for a tasty breakfast! Or eat them by themselves, as they are super delicious!

We, of course, had to have a treat, too!
Introducing: German Chocolate Cake! This is simply the Basic Chocolate Cupcake recipe from Isa and Terry's VCTOTW, turned into a cake, with the Coconut Pecan Fudge Frosting, also from VCTOTW. I looooove German Chocolate Cake, and this is seriously amazing! I added a teaspoon of almond extract to the cake batter, and it made a really nice addition! Almond extract really brings out the flavor of chocolate, plus adds a little something extra for your taste buds. I think you should make this...if that's what you're into.
