Food From the Heart and For the Heart.

Valentine's Day this year was filled with all the things I love: good food and amazing friends. What else could you want on such a holiday?? Nothing!

The day began with breakfast, of course. I had my girls over for a breakfast of heart-shaped biscuits and sage gravy. I made my usual biscuit recipe, but cut them into hearts with cookie cutters my mom gave me as a Valentine's present! Thanks, mom!! Seriously, check out those layers. mmmmmmm yeah. After church a few of us went out to eat at a local restaurant called You Say Tomato. This place is seriously adorable!! There are only a few vegan options, but the staff is really helpful and knowledgeable, and willing to make things vegan for you if you want. So nice! They use mostly local, organic ingredients and serve it all up in a cozy diner setting, which just happens to be my favorite of all time!

I got the Hummus and Pita Plate, which is a big bowl of homemade hummus, topped with a sweet chili sauce, and served with locally-made pita bread and fresh cucumber slices. The sweet, salty, creamy, chewy, crisp combo made for one tasty lunch for sure!
I also got a side of their Roasted Potatoes, which were made with local russet and sweet potatoes! Seriously, potatoes are the best food ever, perhaps.
Dinner was also with my girls (yes, we spend all of our time together!!) spent over candlelight and as a precursor to watching Romeo and Juliet, the Leo DiCaprio version, obviously.

I did the main meal: Rosemary-Walnut Crusted (local) Tofu, Caramelized Onions, Garlic-Roasted (local) Potatoes, and Raw Kale-(local) Beet Salad. Delicious. Raw Kale-Beet Salad (serves 3-4)
1 bunch kale
1 large or 5-6 small beets
1/2 cup red onion, diced
3 cloves garlic, minced
3 Tbs cold-pressed olive oil
1 Tbs apple cider vinegar
2 Tbs lemon juice
1/2 tsp ground black pepper
1/2 tsp sea salt
1 pinch cayenne pepper

In a large bowl, combine the kale and olive oil. Massage the kale with the oil until it softens and takes on a delicate, wilted texture. Add the lemon juice and vinegar, then toss to coat the kale. Add in the onion, garlic, beets, and spices. Stir to combine. Serve immediately or (my favorite) let chill in the refrigerator for at least one hour, and then serve!

The girls took care of dessert, which was awesome!

Emily made a Chocolate-Balsamic Cake with Raspberry-Balsamic Glaze and Fresh Raspberries. The chocolate-balsamic-berry combination is just sooooo gooooood!!! My mouth waters just writing about it! Chelsea made cupcakes, because cupcakes are absolutely perfect for absolutely any occasion!!! She made Vanilla Cupcakes (from VCTOTW) topped with Berry Jam and Coconut Frosting. Another awesome flavor combination! Perfect way to end a meal!

I was so blessed this Valentine's Day with love!!! Thanks everybody!!

Hearty and Wholesome Winter Eats

When it is winter time and snowy and such, all I really want to do is snuggle up inside and make some rib-sticking, delicious food!! So that is pretty much all I have been doing lately...and I love every minute of it!!

Some stuff I have made recently...warm, tasty, filling, and healthy, too...mmmmm.....

Chili-Rubbed Seitan Sandwiches on Homemade Sweet Potato Buns with Raspberry Chipotle Mayo. Sweet Maple Slaw. Mexican Hot Chocolate Snickerdoodles, from Isa and Terry's Vegan Cookies Invade Your Cookie Jar! These are sooooo goood! I made some chocolate cinnamon buttercream, and turned them into cookie sandwiches! Forgot to picture it though....too much eating to do!

Ah, the open-faced sandwich, how I love thee. Side of local Sweet Potato Salad.Salted Caramel Pecan Bars from Isa and Terry's VCIYCJ. These are my favorite thing I have made from that cookbook so far!! Salty and sweet and crunchy and chewy all at the same time!! I served them with some vanilla soy ice cream, and it was a perfect combination! Pecan-Crusted Seitan with Smoky Smothered Greens and Mashed Local Potatoes and Gravy.
Maple Cupcakes with Maple Buttercream and Candied Walnuts from Vegan Cupcakes Take Over the World!!! These are seriously amazing!! They taste like maple doughnuts, which I looooved in my omni days! People went crazy for these! Perfection when eaten with a hot cup of coffee and shared with lovely friends.

Southwest Sweet Potato Corn Cakes with Chipotle-Baked Black Beans

Yesterday's installment of my weekly vegan brunch at my house was full of flavor and full of fun! I made some Southwest-inspired food, for a little spice to warm us up from in the inside out...because it is really flippin cold here in Kansas City!!!
Everyone seemed to really enjoy the food, and I thought it was pretty good, too! So I'll share my recipes with you...really easy and tasty, a great combination!!!
Southwest Sweet Potato-Corn Cakes
with Chipotle-Baked Black Beans and Avocado-Cumin Aioli(serves 8-10)
For the Black Beans:
1 lb dried black beans, soaked overnight in cool water
1- 4 oz. can tomato paste
1 3 or 4 oz. can chipotles in adobo sauce, diced
1/4 cup molasses
1/4 cup apple cider vinegar
2 Tbs hot sauce of choice
2 cloves garlic, minced
2 Tbs olive oil
2 Tbs vegan Worcestershire sauce
2 tsp chipotle powder or chili powder

In a large pot filled with water, cook black beans for 1 hour, until tender. Drain and set aside.
Preheat oven to 350 F.
In a large bowl, whisk together the tomato paste, chipotles with their sauce, molasses, vinegar, hot sauce, garlic, olive oil, Worcestershire sauce, and chipotle powder. Stir until well combined. Add the cooked black beans to the prepared sauce and stir to coat completely. Pour beans into a 9x13 baking dish. Bake in preheated oven for 1 hour, stirring halfway through. While the beans bake, prepare the Sweet Potato Cakes (below).

For the Sweet Potato Cakes
3 lbs sweet potatoes, diced:
2 cups corn kernels
2 cups masa harina
1/2 cup unsweetened soymilk
1/4 cup olive oil or melted margarine
3 cloves garlic, minced
1 Tbs baking powder
2 tsp sea salt
2 tsp Adobo seasoning
1/2 tsp cumin
1 tsp paprika
1/4 tsp cayenne pepper
1/2 tsp black pepper
1 tsp onion powder

Preheat oven to 350 F. Bring a large pot of water to boil and cook sweet potatoes for 10-12 minutes, until cooked throughout and fork-tender. Drain and return to the pot. Mash well, a few chunks remaining is fine.
In a large mixing bowl, combine the masa harina, baking powder, and spices. Stir to mix well. Fold in the corn and garlic, and then stir to coat with dry ingredients. Add in the mashed sweet potatoes, soymilk, and oil or margarine. Mix together ingredients until completely combined.
Heat a griddle or skillet or medium-high heat. When pan is hot, lightly oil to prevent cakes from sticking. Scoop 1/4 cup of the sweet potato batter and place onto the hot pan. Spread the batter out to approximately 3-4 inches in diameter, 3" if you want a thicker cake and 4" if you want thinner. Allow to cook for 5 minutes and then flip and cook the other side for 5 more minutes, until both sides are browned and the cakes have become firm. Place cooked cakes onto a baking sheet and let finish cooking in preheated oven for 1o minutes, which will allow them to become firm and cooked completely. Remove and serve immediately, topped with Chipotle-Baked Black Beans and Avocado-Cumin Aioli.

For the Avocado-Cumin Aioli:
2 ripe avocados
4 cloves garlic, minced
Juice and zest of 1 lime
1/2 cup vegan mayonnaise
1/4 cup soymilk
1 tsp cumin
2 tsp salt

In a blender or food processor, combine all of the ingredients and blend until completely smooth. Refrigerate until ready to use; this is even better if made a day in advance.

And, to finish of such a wonderful meal, there had to be a wonderful dessert: Mexican Hot Chocolate Cupcakes from Vegan Cupcakes Take Over the World by Isa and Terry!! These are some of my favorite cupcakes in that cookbook!! I double the amount of Cinnamon Buttercream, because I'm a frosting kind of girl, and I use whole wheat pastry flour instead of all purpose, because I'm also a whole grains kind of girl! I love these soooo much....and everyone else did, too!!
Here's a few pics of people enjoying some tasty food on a lovely, cold Saturday afternoon! Thanks to everyone who braved the weather for vegan food and supporting sustainability!!

I can't wait til next Saturday!!

Cookies and Cream Cupcakes

My lovely friend, Jordan, had her golden birthday yesterday! What better way to celebrate than with cupcakes?! I had never made the Cookies and Cream Cupcakes from Vegan Cupcakes Take Over the World, so I baked these up as her b-day cake/present. If you haven't eaten or made these before, they are the Basic Chocolate Cupcake with crushed sandwich cookies in the batter, topped with the Fluffy Buttercream Icing that has more crushed cookies in the frosting, garnished with yet another sandwich cookie! Heavenly. I used Newman O's for the cookie part, btw. Amazingly good, and surprisingly not too rich or sweet or anything! My only regret is that I hadn't made/eaten them before!

Best Week Ever?!

What a week it has been so far...and it's not even over!! Just for a quick recap: I passed all of my pre-internship exams this week, Obama was inaugurated, and season 5 of LOST premiered tonight! For three hours! I can only pay tribute to all the awesome events with yummy vegan food...

First, the end of Bush and the beginning of Obama! I am so excited!!!! I used the toppers from the Bake and Destroy blog, like the ones I used for election night cupcakes, to commemorate our lunchtime sandwiches (Obamawich?) as the inauguration was occurring. Yeah, I am pretty cheesy like that...but don't they look cute!
I also got to utilize some of the Tex Mex food Steven brought me from his Texas trip last month! Yay! I made a Pinto Bean Mole, with the jarred mole sauce he bought, onions, garlic, corn, bell peppers, local zucchini, green beans, pinto beans, tomatillos, Mexican chili powder, and lime juice. It was soooo good! I have never had mole from a jar before, so this was a cool thing to try. It got thicker than I expected, mostly because of the peanuts and cocoa, but it was still tasty. I prefer the homemade stuff, but it's hard to argue with a souvenir and a time-saver! I served it up with some homemade guacamole from the avocados, cumin-lime millet, and fresh lime wedges! I only wish I had some rice milk horchata to wash it all down!
Another plus this week was that I perfected my Creamy Creole Sauce! I am excited about this, because I really like this creamy texture and spicy flavor with dishes like the Cornmeal Crusted Tofu from Veganomicon, with my faux "crab" cakes, and even on sandwiches and veggies. I will give you the recipe, as I am feeling generous! :)
Creamy Creole Sauce (makes about 2 cups)
1 cup spicy brown or dijon mustard
1/2 cup vegan mayo
juice of 1 lemon
1 tsp maple syrup or agave nectar
1 Tbs Louisiana-style hot sauce, like Frank's
1/4 tsp salt
1/2 tsp black pepper
1 pinch cayenne pepper, to taste
In a small bowl, whisk all the ingredients together until well combined. Pour into a sealable container and refrigerate until ready to use. Will keep for about 1 week in the fridge, but it won't stay un-eaten that long!
Now for the sweet stuff: LOST Cupcakes!! I, again, got some cutie patootie cupcake toppers from Natalie's Bake and Destroy Blog. I love these things! It really makes cupcakes taste better, if that is possible. We got a huge bag of crystallized ginger this week at the store, so I decided to make the Gingerbread Cupcakes with Lemony Frosting from VCTOTW!! I hadn't made these before and I am not sure why! They are so moist from all the molasses and so flavorful and delicious! I love the little accent of a crystallized ginger piece!
Oh, and how awesome was LOST??? I will just nerd out for a second and tell how flippin pumped I am for the fifth season!! Is anyone with me on this? Maybe I am just excited for having more LOST-watching parties so I can bake and be with good friends. Maybe.
Here's all twelve different toppers, happy and together pre-premiere:

Cooking for One...

Well I will be cooking for just myself for the next few days, because Steven is away on a camping/climbing trip to Alabama. I feel like I almost forgot how to cook for only one person, since I am always cooking for two! I have still managed to eat well, though :) Here's a few things that I have enjoyed over the past few days...yay alone time! Homemade Seitan Brats with Leeks and Apples,
Roasted Brussel Sprouts, Rosemary Sweet Potatoes

BBQ Tofu (Veganomicon), Mashed Sweet Potatoes, Sauteed Kale
My Perfect Meal: Quinoa, Tofu, Sweet Potatoes, Kale, and
Tahini-Miso Sauce (Veganomicon)

Earlier this week, a bunch of my friends, all of whom happen to be roommates with Steven, had birthdays...Since they all live in the same house, I made them all one batch of cupcakes to share. With the recent COLD weather I wanted something "warm"feeling, so I made the Mexican Hot Chocolate Cupcakes from VCTOTW. I whipped up a Cocoa-Cinnamon Buttercream to top them off...and they also got a little kiss of powdered sugar!

These cupcakes are soooooo good! I absolutely love the combination of chocolate, cinnamon, and cayenne....it makes you feel all warm and happy inside. The coconut milk and cornmeal make them have an awesome texture, too! Make these! I might go so far as to say they trump an actual mug of hot chocolate...but maybe I would just like to enjoy them together :)

Even though I am appreciating this alone time, I think I am ready to cook for two again!

Craving Some Soul Food

Some things are just good for your soul. For example, my soul was absolutely ecstatic on Tuesday night when Barack Obama became our next president!!!! Perhaps it was due to his awesome-ness, his amazing staff's work, or my cooking?! I did make those lucky black-eyed peas, you know! I also made these Barack Obama Cupcakes!! As good as these were, I guess he deserved his win from his own merit....

These are the Pumpkin-Chocolate Chip Cupcakes from Vegan Cupcakes Take Over the World, topped with a Maple-Cinnamon Buttercream that I whipped up...and they are blessed with little Obama cupcake toppers, courtesy of Natalie at Bake and Destroy!! These were a perfect way to celebrate a victory! Oh, and the pumpkin puree used in these was some I made myself from a locally-grown pumpkin courtesy of the Columbia Farmer's Market and Steven! yay DIY! These not only tasted amazing, they were life-CHANGING! :)

Another thing that is good for your soul: SOLE food! This is a culinary ideology and, more recently, a trend where consumers are beginning to desire foods to eat/purchase that are: Sustainable, Organic, Local, and Ethical. I hope this is not just a hip trend for eaters, but that it becomes a way of life for people everywhere. Here are a few meals we had this week that were both in the area of soul foods and SOLE foods!

Seitan Chorizo-Stuffed Acorn Squash with Angelica Kitchen Cookbook's Cornbread

V-Con's Cornmeal-Crusted Tofu, Dirrrrrty Brown Rice, Roasted Root Veggies

BBQ Soycurls, Angelica Kitchen Cookbook's Cornbread, Garlic Barack-oli
(we had this on election night, I had to go there....)
This week has been so crazy, but I am so glad the election is over and I can think about other things! Thanks to everyone who worked for the Obama or their state/local campaigns! It really is important...I promise :)

Fronch Toast and Cinnamon-Baked Apples. For Dinner!

Today is the 8th day of Vegan MoFo...I can't believe we're in the second week already!
Tonight, Steve and I needed some breakfast for dinner...go figure! I made Fronch Toast from VWAV, using some tasty baguette from Uprise Bakery here in Columbia. I had never made this before, so I wasn't quite used to making this with baguette instead of sliced bread, but it turned out pretty good! Not perfect, but everything's good with lots of maple syrup :) I served it with Scrambled Tofu, with onions, garlic, peppers, spices, local purple cherokee tomatoes (my absolute fav tomatoes! ) and cilantro. Screw you, eggs! Scram'fu will kick your butt! We also had some Cinnamon-Baked Apples, which I based on some baked apples I've had from Germany, to tie it all together. I am almost certain I will still be eating these apples we picked for all of my days. oh well! These are so fall-y and delicious...it's like the filling of apple pie, but quite a bit healthier! I will give you the recipe, I suppose! Cinnamon-Baked Apples (serves 2)
2 medium apples, thinly sliced
1 tsp Earth balance, cut into little cubes
1/4 c raisins
1/4 c chopped yellow onion
1 Tbs cinnamon...or more, if you're naughty
1 tsp nutmeg
dash of cloves
dash of salt
2 Tbs maple syrup
pinch of cayenne

Preheat oven to 350 F. Combine all of the ingredients in an oven-proof pan and bake for 15 minutes. Remove from the oven, stir the apples, and bake for 15 more minutes. Serve over toast or pancakes for a tasty breakfast! Or eat them by themselves, as they are super delicious!

We, of course, had to have a treat, too!
Introducing: German Chocolate Cake! This is simply the Basic Chocolate Cupcake recipe from Isa and Terry's VCTOTW, turned into a cake, with the Coconut Pecan Fudge Frosting, also from VCTOTW. I looooove German Chocolate Cake, and this is seriously amazing! I added a teaspoon of almond extract to the cake batter, and it made a really nice addition! Almond extract really brings out the flavor of chocolate, plus adds a little something extra for your taste buds. I think you should make this...if that's what you're into.

Mezze Platter!

Tonight's dinner was an amalgamation of different yummy Mediterranean-based items, aka a mezze platter! I love the idea of having a little taste of everything, to give your taste buds more of an adventure than the average meal, and it is also a great way to clean out your fridge :)
The mezze platter that Steve and I shared for dinner was awwwwwesome and consisted of: muhammara (recipe from Vegetarian Times), warm whole grain pita bread, roasted local eggplant with garlic and olive oil, local cucumber slices, chopped local tomato, soy feta from Sungeria Foods (!!!!), kalamata olives, and Vegan Dolmas from Whole Foods (they come in a jar, packed in a lemony-olive oil brine. omg.) This was wonderful, and I was so happy to have foods like dolmas that I rarely get to enjoy!

Close-up of the delicious Vegan Dolmas

Close-up of the roasted local eggplant and Sungeria Foods' soy feta

All of the goodies together on my Mezze Plate!

On another note (or two...) yesterday's tradition of meeting at Cafe Berlin for breakfast was another amazing experience! For the record, breakfast is the best meal. Anyway, since Steve and I are such regulars there, and we are pretty well-known for our food habits (crazy vegans!), the head cook there, Eli, has made us up a few specials things every once in a while. Cuz we're cool like that. Yesterday, he whipped us up a vegan version of a Slinger. This breakfast was big and savory and hearty. WOW.

For those of you who don't know, a slinger is a popular diner breakfast dish, and it originated here in Missouri...in St.Louis to be exact! The general idea is this: hashbrowns piled with scrambled eggs, chili, cheese, sometimes salsa or sour cream, then flanked with buttered toast. Sounds like a heart attack just waiting to happen, right?! But none of that crap would do for us!! Our customized vegan version of the St. Louis Slinger was so much better: Roasted home fry potatoes (red and sweet), scrambled tofu, veggie chili, sauteed greens and red onions, then a garnish of fresh scallions and cilantro, then flanked with whole wheat toast that was eventually slathered in organic strawberry jam. Top that off with a hot cup of organic fair trade coffee and good friends, and I'm pretty sure that breakfast will be your new favorite meal!!!

St. Louis Slinger...vegan-style!

For dessert tonight, we had the Chai Latte Cupcakes from Isa and Terry's Vegan Cupcakes Take Over the World (duh.), which I topped with some Vanilla Buttercream Frosting before dusting with the cinnamon-cocoa mixture. These are especially yum when paired with some chai tea. Not to tell you what to do...but do that!!

Chili and Cornbread--and other stuff, too!

Today being a rainy, dreary day put me in the perfect mood for making one of my favorite comfort meals: chili and cornbread! I love the combination of the sweetness from the cornbread and the spiciness of the chili. it's perfect.Tempeh Chili (with some Tofutti Sour Supreme)

Tempeh Chili (serves 8-ish hungry peeps)

2 T canola oil
2 yellow onions, minced

1 green pepper, minced (reds work here, too!)

Whole Grain Cornbread (serves 8 to 12)

1 1/2 cups cornmeal

2 cups whole wheat flour

1 jalapeno, minced (optional)

Preheat oven to 350 F. Lightly oil a 9 by 13 pan. Sift dry ingredients into a large bowl. Fold in the corn and jalapeno. Blend the wet ingredients, except the water, together in a blender. Pour in the wet ingredients into the dry ingredients. Pour water in blender and swirl around to get all the leftover batter, then add to bowl. Combine everything until just mixed, but do not over mix! Bake for 2o to 25 minutes, until inserted toothpick comes out clean. Serve warm, slathered with lots of Earth Balance and agave nectar!!

My slice of whole grain cornbread, served with some roasted local squash and breadcrumbs!

A few days ago, I made my favorite Thai Peanut Noodles for dinner, and it was really pretty...but I forgot to post about it! I used mugwort soba noodles, baked tofu, and a saute of garlic, ginger, onions, cabbage, carrots, and broccoli, then topped with my creamy, spicy peanut sauce that I have posted about before. If you've never had a good peanut sauce, give this one a try! For reals.

Thai Peanut Noodles

I have also made some delish desserts this week. I think frosting may be the most important part of a good treat, I must confess! Earlier in the week, I made the Toasted Coconut Cupcakes from Vegan Cupcakes Take Over the World. Holy Moses I loved these! I even made my own chocolate-covered espresso beans for the garnish...I was proud :) These are wonderfully paired with a nice mug of Tahitian Vanilla Hazelnut Yogi Tea with some Silk creamer and agave!!

Toasted Coconut Cupcakes with Coffee Buttercream Frosting and Chocolate-Covered Coffee Beans

Thursday night, I made an AMAZING batch of Banana Brownies with Peanut Buttercream Frosting, based off of a recipe that I like to make at work. Probably the best brownies I have ever made. The peanut butter-chocolate-banana combination is HEAVEN. Yay for over-ripe bananas! And frosting!!
Banana-Chocolate Chip Brownies with Peanut Buttercream Frosting

Banana Brownies (makes 12)

2 large bananas

1 1/2 cups turbinado sugar

2 tsp vanilla extract

1/2 c canola oil

1 cup soy milk

2 cups whole wheat pastry flour

1/2 cup cocoa powder

1 tsp sea salt

2 tsp baking soda

1 cup chocolate chips

Preheat oven to 350 F. Lightly oil a 9 by 13 pan. Blend bananas, sugar, vanilla, oil, and soymilk in blender. Pour into a large bowl. Sift in the dry ingredients and stir until just combined. Fold in chocolate chips. Pour batter into oiled pan and bake for 25 to 30 minutes, until inserted toothpick comes out clean. Let cool completely, then frost with PB frosting!

Peanut Buttercream Frosting

1/4 cup non-hydrogenated shortening

1/4 cup Earth Balance margarine

1 cup peanut butter

1 tsp vanilla extract

1 T soy milk

2 cups powdered sugar

Cream the shortening and margarine together until well combined. Add in the peanut butter and combine some more. Sift in the powdered sugar, 1 cup at a time, adding in the soymilk between batches. After mixing the second cup of powdered sugar, add in the vanilla and whip for about 5 minutes, until smooth and creamy. Refrigerate until ready to use, then spread on cooled banana brownies.

Steve's hand, getting ready to put his brownie into his hungry belly...

Carrot Cake Cupcakes

I swear, I will never get sick of all this wonderful local summer produce! This week, I picked up some local organic carrots at the market...and they were so freakin good, I knew exactly what to do with them: carrot cake cupcakes! I used the recipe from Vegan Cupcakes Take Over the World, but I added about 1/2 cup of chopped crystallized ginger to the batter with the raisins and walnuts. These were so tasty! Perfectly moist and full of carrot-y goodness! And of course, they were even more awesome with cream cheeze icing and a lovely toasted walnut half on top!
If you can get your hands on some nice local carrots, give these a try! (oh, p.s. sorry about the blurry crappy picture! my apt has awful lighting...i'm workin' on it)

Vegan Carrot Cake Cupcakes (makes 12)
(the ingredients with a * are my additions to the recipe)
2/3 c whole wheat pastry flour
3/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
1/4 tsp ground cinnamon
1/4 tsp ground ginger
*pinch of nutmeg
2/3 cup turbinado sugar
1/3 cup vegetable oil
1/3 cup plaiin soy yogurt
1 tsp vanilla extract
1 cup finely grated carrots
1/4 cup chopped walnuts
1/4 cup raisins
*1/4 cup chopped crystallized ginger
Preheat oven to 350 F. Line muffin tin with 12 cupcake liners.
In a mixing bowl, combine the sugar, oil, yogurt, and vanilla. Sift in the dry ingredients and mix well. Fold in the walnuts, raisins, and ginger pieces.
Spray the liners with non-stick spray. Fill each liner with batter to 2/3 full. Bake for 26 to 28 minutes, until toothpick comes out clean.
Cool completely and frost with Cream Cheese Frosting. Then stuff your face.
Cream Cheese Frosting
1/4 cup non-hydrogenated margarine (ok, Earth Balance. let's be honest.)
1/4 cup vegan cream cheese
2 cups powdered sugar
1 tsp vanilla
Cream together the softened margarine and cream cheese until smooth and fully combined. Sift in the powdered sugar, 1/2 cup at a time and whip until fluffy and creamy. Stir in the vanilla and whip for a few more minutes. Smear onto fully cooled cupcakes and place toasted walnuts on top to make them all pretty like.
