Holy Muffuletta!
How in the world had I never made and/or eaten a muffuletta sandwich before???? Sandwiches are my favorite food ever! Well, I'm glad I finally did it, whatever the hold up was. I made the Muffuletta Sandwich recipe from the Veganomicon cookbook, but modified it by adding Tofurkey brand Italian Deli Slices and subbed some herb-marinated tempeh for the eggplant, since it's not yet available at the farmers' market. When it is, I'll be sure to make it again!!! Olives are just wonderful, and a showstopping sandwich like this is a perfect way to let them shine! This awesome recipe was made even better by using a delicious locally-baked crusty bread, from KC-based Farm to Market bread company. Yum City, USA!!
ps this went perfectly with a side of tasty vegan potato salad! duh!

Corn Porn: Tempeh Tostadas! Mexican Corn!
Fresh, local sweet corn is one of my favorite things about summer!! Corn is so perfect because it is so tasty, so versatile, and so easy to prepare! Of course, looking for local and/or organic corn is ideal for both health and environmental sustainability, but that is easy to find here in Missouri!
I am trying to do a lot of recipe testing for Terry's Vegan Latina cookbook this week, and corn is a huge staple in Latina cooking, so this seasonal delight is showing up on my plate often! No complaints here!

Dinner last night was pretty corn-happy:

A Vegan Latina tester recipe: Mexican Side-Street Corn! Fresh corn is roasted and smothered in all sorts of spices and lime juice! whoa!
Another VL tester recipe: Tempeh Asado! The vegan version of the traditional (and cruel.) carne asada. Tempeh marinated in awesome spices and lime juice, then pan-grilled. It was soooo flavorful!! Tempeh is so wonderful for soaking up flavors and holding on tightly to them until they meet your tongue! The Tempeh Asado is perfect for tacos, burritos, or any Mexican-themed meal...
So I put mine in tostadas for dinner last night! I needed to use up the rest of my tostadas, so Tempeh Asado Tostadas were a great opportunity to reduce my waste. The corny flavor and crunch texture of the tostadas went perfectly with the chewy, savory, tangy tempeh...and some fixings like avocado, red onion, tomato, and local salsa, of course!
And I had some leftover Latina tester So Good, So Green Dipping Sauce which made the feast complete!
BTW I moved to Kansas City last week (from Columbia...not too far away)! This was one of my first meals in my new apartment! yay! That made this meal all the more special!
And if you are in KC or thereabouts, holla at me and we can make/eat/demolish some food together or ride bikes or just cause some old-fashioned vegan mayhem in the city! yay!

Dinner with Terry and Isa
Tonight I had dinner with Terry and Isa. OK, maybe I didn't actually "dine" with two of the best vegan chefs ever, but I did make one Terry dish and one Isa dish for my dinner tonight! It was great! Tonight's meal was Latina-themed, since I am currently testing for Terry's upcoming Vegan Latina cookbook. btw, this cookbook is going to be awesome! A lot of the recipes are multi-step and take some time, but all of the recipes I have made so far have turned out delicious!!
The main course was the Sexy Avocado-Tempeh Stuffed Arepas, a Vegan Latina tester. omg these were amazing!! If you haven't heard of arepas before, they are a little corn-based tortilla, but much thicker and denser, and they are used for stuffing and devouring! Very popular in South America especially. The insides of these Venezuelan-style Arepas have a polenta-like texture, while the outsides are crispy, almost like the crust of American cornbread...these are very interesting and tasty little treats! The Avocado-Tempeh Filling is really creamy and delicious, and gets a little zing from lime juice, and there is a secret filling ingredient: shredded jicama! It lends an amazing texture! I could go on and on about these little guys, but I will let the photos do the talking:
First, the Masa Harina-based dough is pan-fried...
And, of course, cooked to a golden brown for a nice crust...
Then, they all go in the oven for a little while to get the insides nice and cooked...
And then they are ready to be stuffed with all sorts of goodies!
Here they are, stuffed and ready to be eaten! Even better with a few dashes of hot sauce along the way!

I picked these mainly because this sounded like a perfect Latina accompaniment to my Terry-tester-arepas, but also because I really want to make everything ever in Vegan Brunch!! These were really good, too! I like my version a little better, I must admit, as these were more salty and less sweet, but still delicious! I mean, it IS an Isa recipe for goodness sake...can't really go wrong, can you??!

The First Day of School...My Last One!
So everyone be really excited and happy for me because today was my last first day of school ever! I will be graduating in May, with a degree in dietetics, so no more class for me after that! At least not for a long time...
To celebrate this momentous occasion (kind of.) I thought I needed to start the day with a good breakfast! What better place than Columbia's best local bakery, Uprise Bakery! They make a fantastic granola there, and they offer soy milk, so this was perfect. Their Almond Crunch Granola has a really nutty and sweet flavor, but is not too sugary to overpower the wonderful flavors of the almonds and sesame seeds. The perfect combination of salty and sweet, with a lovely hint of vanilla! One of my new favorites!

Tonight's Southern treat was Country-Fried Tempeh Steak with "Milk" Gravy. That just sounds too good...AND it tastes that way! This recipe is really true to its country-fried cousin with its triple-breading and salty, savory flavor. Oh, yeah, did I mention gravy? Maybe I forgot to mention this awesome gravy! I love a nice, peppery gravy for a little creamy texture on top of my crunchy. This did the trick! You all are going to love this freakin cookbook if you like down-home cooking at all!!

Crunk Testing and A Perfect Breakfast!
I have some amazing recipes for the Vegan Crunk cookbook, Cookin' Crunk, testing project to share with you! I must warn you, though...these look really tasty, so don't try to eat your computer! Just enjoy the pics and wait for the book to come out so you can enjoy them at home for reals!

Now for a wonderful winter-time breakfast: Breakfast Apples and "Sausage." This dish is inspired by one of the menu items at my favorite breakfast place in Columbia, Cafe Berlin. It is a combination of veggie sausage (I used my vegan andouille sausage, because the cafe uses real, local andouille meat sausage, red onion, garlic, apples, spices, and maple syrup. Sooooo flippin good! It was pretty easy to recreate and I was so pleased with the sweet and savory combination of the dish!! Breakfast is served!
1 tsp olive oil (can also use vegan margarine if you are feeling adventurous)
1 cup red onion, sliced thinly
2 cloves garlic, minced
1 large organic apple, sliced thinly
1/4 cup REAL maple syrup
1 cup water
1 Tbs cinnamon
1/4 tsp salt
1/4 tsp black pepper
1 tsp chili powder
1/4 tsp cayenne pepper
2 vegan sausage links, sliced (or 1/2 block diced tempeh for a gluten-free meal)
In a large pot, heat the olive oil over medium-high heat. When the pan is hot, add the sliced red onion and saute 5 minutes, until softened and translucent. Add in the garlic and saute for 2 more minutes. Turn the heat down to medium-low. Add the sausage slices, apple slices, cinnamon, chili powder, and cayenne. Saute for 2-3 minutes until apple begins to soften. Add the maple syrup and water, then turn the heat up to medium-high. Bring to a light boil, then add the salt and pepper, cover and turn to low. Cook on low heat for 5 or so minutes, until the apples and onions are softened and the liquid is almost fully reduced. Remove from heat and serve!
--This is GREAT with a few slices of toast slathered with sweet potato butter or some raspberry jam!! And don't forget the coffee!--

Tester Chili and Sweet Potato Butter
Being a tester for Bianca's (Vegan Crunk) upcoming cookbook has gotten me really excited to cook recently! With only two dishes down, and I can already tell this is going to be a wonderful testing process and an even better final cookbook!
The first tester recipe this week: Chipotle Chickpea Chili! This is one hearty chili...packed full of beans, chipotle peppers, and a few other surprise ingredients...and it is really delicious! It was just perfect on a cold night like tonight! I served it with sauteed greens and some of my homemade whole wheat biscuits. And yes, that is my homemade sweet potato butter slathered on those little biscuits!
Since I'm not able to give you the chili recipe (I can keep a secret!), I will give you my recipe for sweet potato butter! It's made in the crock pot, but you could use a pressure cooker if you have that instead. Here's a picture of the little cubes going into the beautiful red crock pot:
Sweet Potato Butter (makes about 3 cups)
1 1/2 lbs sweet potatoes, peeled and diced
1 qt water
1 Tbs cinnamon
1 tsp nutmeg
1/4 tsp allspice
1/4 tsp cloves
pinch of cayenne pepper
1/2 tsp salt
1 Tbs sugar
1 Tbs maple syrup or agave nectar
juice of 1 lemon
In a medium or large crock pot, place the water, diced sweet potatoes, and sugar. Turn on to high and allow to cook for at least 8 hours, or until the sweet potatoes are very well cooked and the water has almost completely reduced. Add the spices, salt, maple syrup, and lemon juice to the cooked sweet potatoes. Stir and cover again. Allow to cook for 2 more hours on high. Turn off heat and allow to cool. Pour mixture into food processor or blender and puree until smooth...an immersion blender would work here too! Put into jars and refrigerate.
**If there seems to be extra water in the crock pot after cooking the sweet potatoes, drain a bit off before adding the spices, etc.**
The cold weather of winter has made me crave more rib-sticking and homestyle foods. Some examples from this past week:

A Hill of Beans
My love of beans has grown immensely lately. Is it because dried beans are dirt cheap (even organic ones!)? Or is it because they are really tasty and nutritious? Or is it because they are so very versatile? Well, I would have to say it's all of those reasons! So here's some bean-based meals I've made over the past week!!
Northeast Nourishment: Boston Baked Beans, New England Brown Bread (both from VegNews), and Fresh Green Beans with Cranberries
Southern Comfort: Creole Black-Eyed Peas with Sweet Potatoes, Jalapeno Corn Bread, and Garlicky Greens
Island Delights: Caribbean Black Beans, Coconut-Mashed Yams, and Garlic Ginger Roasted Broccoli

1 Tbs soy creamer
1 tsp cayenne pepper
1/2 tsp salt
1/4 tsp black pepper
1 tsp paprika
4 cloves garlic
1 lemon, peeled
1/4 cup chopped yellow onion
In a blender, combine all of the ingredients and blend until completely smooth. Toss with seitan and serve hot with vegan ranch dressing! mmmmmm......salty and spicy goodness!!
And, because dessert is NEVER to be forgotten:

Noodles and a Taste Test
I have been really in the mood for cooking lately, which makes me really happy! Also, I have been doing this thing where I plan the meals for the next week and make a grocery list to match, which has been saving me a TON of money, time, and stress for cooking...and that makes cooking all the more fun!! Here's a few dinners from the past week...I have been craving noodles, so we've had them several times! mmmmm. nooooooooodles.
punk-in pasta...with my home-roasted pumpkin, from La Dolce Vegan (with greens added!) and a side of baked apples! the pasta is whole wheat and made LOCALLY! bonus!
mugwort soba noodles with baked tofu, veggies, and a homemade peanut sauce
freaking amaaaazing tempeh reubens!!! ok, it's not noodles, but sauerkraut is noodl-y looking i guess :)
Okay, now on to the chocolate taste test! Our local natural foods market, Clover's, starting carrying this limited edition Chocolove chocolate that is single-origin, fair-trade, and from a 2007 vintage cacao bean crop! I adore chocolate in all ways, so when Steven and I saw that there were four different varieties, he had the genius idea of doing a taste test! We are now well on our way to becoming chocolate connoisseurs!! The four varieties were: 76% cocoa from Tanzania; 72% cocoa from Ecuador; 70% cocoa from the Dominican Republic; and 60% cocoa from Grenada. They were all some of the best chocolates I have ever tasted...perfectly creamy with a good bite, and a wonderful balance of sweetness and bitterness. We did a side-by-side comparison of the four and here were our results (we cleansed our palates in between, of course!)

Hot Sauce Glazed Tempeh and Some Product Reviews!
I have been super busy and unable to consistently blog....but I have lots to talk about and a little time, so yay!

Soyrizo with Tomatoes and Greens, Chili-Baked Polenta, and Pepitas
First up is the Hot Sauce Glazed Tempeh from Veganomicon! Good Lord this is so tasty! I love how savory and salty and spicy this is...I could not believe I hadn't made this before, especially with my affinity for hot sauce! I went home-style and served it with mashed potatoes (thanksgiving leftovers!) and garlic-sauteed greens...this was an awesome and comforting meal!!
I have also been trying lots of new products lately, from Clover's and Whole Foods...I love to go on food adventures :)
First is SOYRIZO! I freakin love this stufff! I have had a few other kinds of vegan chorizo before, and I loved it, so I had to give this a shot! It was a lot more flavorful and spicy than the other kinds I have had, but a little saltier, too. I served this up kind of mexican-style with veggies and such:

The next new item is Kozy Shack Soy Pudding! It was really nice to see a clearly vegan item it a common grocery store, in with all the other products!! And this is sooooooo tasty! It really reminds me of childhood...especially the yummy chocolate flavor!

Then there's a holiday must: "Egg" Nog! I always buy the soy variety by Silk, but Clover's started carrying a Rice Dream soy nog, so I had to try it! I must say that the flavor is great and definitely tastes like the holidays. Yuuuummy spices and all that jazz! But, being rice milk, it is just not quite as thick as I would want a nog to be. And I like it thick! Steven says this is good on granola, though! mmmmm!! I would for sure recommend this if you aren't down with soy, though, cuz it is really tasty!

I'm A MoFo Burnout.
Man, am I the only one who has a little Vegan MoFo burnout?? I mean, I really loved the excitement it brought and the push to be more creative in cooking and blogging, but it made me a little bit exhausted, too! I have been cooking a lot, though...just not totally psyched on blogging about it much. Also, I feel a little out of new ideas from the recent surge of creativity, so I have been making a lot of old standards...they are still delicious and beautiful, though!

Vegan MoFo Day #19: Sunday Traditions
Sunday is one of my favorite days, mostly because it always involves great food!
Every Sunday, a bunch of us have our traditional breakfast at Cafe Berlin (not a German restaurant, btdubs) and it is always wonderful!! Every Sunday, a bunch of us have our traditional breakfast at Cafe Berlin (not a German restaurant, btdubs) and it is always wonderful!! We sit around and eat wonderful breakfast food and drink coffee and talk and love. Today was no exception...and the bike ride there was especially beautiful with the great weather!
Today, I had the Apples and Tempeh "Sausage", with a side of roasted potatoes. This IS fall!!
Then, after a long day of homework, studying, and exercising, a nice dinner was necessary.
I, again, was craving the Cornmeal-Crusted Tofu from Veganomicon...I swear this is addictive! The crunchy outside and chewy inside are an awesome contrast, and it is a perfect pairing with mashed local sweet potatoes and garlic-sauteed greens. This is becoming one of my favorite meals...so much so that I am now out of hot sauce! :)
Dessert was Banana Bread from The PPK (theppk.com). This is a really hearty, dense, and flavorful quick bread, and not too sweet. I loved it, and I used whole wheat flour, so I could even feel good about it being healthier! hoooray!
OH. and Vote on November 4th! Obama needs YOU!

My First Homemade Apple Pie!
To commemorate the coming of fall and day two of Vegan MoFo...and my surplus of apples that Steve and I picked...today I made my first homemade Apple Pie!! This was also my first homemade crust, so I spent a lot of time on this baby! It was well worth the effort, however because it came out wonderfully! I used the Apple Pie recipe in The Joy of Vegan Baking by Colleen Patrick Goudreau, and I would highly recommend it! The crust came out nice and crisp, but not too dry, and the apples weren't over cooked or mushy--they still had a little bite to them. Next time, I would put more Earth Balance inside with the apples to give it a little more moisture to the apple filling, but otherwise, this was a killer pie! I must admit, we all ate it while watching Biden kick Palin's butt in the v.p. debates. perfect.

To DIE for :)Also, I made my traditional breakfast for dinner tonight! I really could go on and on about having breakfast foods at dinner time, but I will show restraint. To start to chip away at my apple abundance, I made Apple Cinnamon Waffles, modified from the Ginger Pear Waffles recipe from Isa's Vegan With A Vengeance...I just subbed apple for pear, and subbed walnuts for the crystallized ginger. I also doubled the amount of cinnamon...I must admit, these were wonderful! A perfect use for apples and satisfying to the sweet tooth when blessed with some REAL maple syrup!
To go with these awesome waffles, I also made the Tempeh Bacon from VWAV...mmmmmmm smoky....and some roasted purple potatoes with chipotle seasoning and garlic. A great fall dinner for sure. Yay Vegan MoFo!
