Easy Weekday Eats

Here's some tasty things I have eaten this week! Quick, easy, healthy, yummy. No complaints here!
PB&Co White Chocolate Peanut Butter...Orange Marmalade...Toasted Almonds...on Local Whole Grain Bread...from the PB&Co. Cookbook! Amazing sandwich!!
Tofu "Parmesean" Open-Faced Sandwiches: Italian-Baked Tofu, Marinara Sauce, Cheezy Mozzarella Sauce, and Basil. yum!!!! with a Raw Beet Salad. perfect.
Big'n'Tasty Salad: Red Leaf Lettuce, Cabbage, Red Onion, Apples, Sweet Potato, Toasted Pecans, Tahini Dressing. Hit the spot after a long run!

What kind of cheezy mozzerella sauce did you use? It looks fab! And PB and Company has a cookbook?!!! I must find a copy.

courtney: unfortunately, no i don't have a specific recipe for the sauce...maybe i should work on spitting out a recipe! :) it is basically tahini, nooch, lemon juice, salt, and soymilk, really easy stuff! sounds like i need to write more things down!

You should seriously come cook dinner for me. In fact, you COULD just invite me over for dinner every night since we DO live in the same town.

That salad, oh my goodness, I love sweet potatoes and would have never thought to put them in a salad, you are genius.

I am in Columbia and I just bought "This Crazy Vegan Life" by Christina Pirello. I've dabbled with vegetarianism in the past and now making a commitment to going Vegan.

I'm so nervous about whether or not I can do it, but your blog gives me hope! I look forward to reading your posts and I'm going to have to stop by Main Squeeze for some good food to teach me how to cook vegan.
