I Love Testing!!

I cannot stress enough how much I looooove being a recipe tester!! With Terry's Vegan Latina/Viva Vegan! finished testing, I am so glad there was Queen V's Vegan Bakesale cookbook testing to take its place! I am also still working on testing recipes for Bianca's (of the awesome Vegan Crunk blog) southern cookbook, Cookin' Crunk. Both are tons of fun, and have been providing me with dinners and desserts to keep me....and my guests....happy!

Last night I made recipes from Cookin' Crunk testing for dinner: BBQ Tempeh and Carrot Sandwich with Poppyseed Coleslaw. It was delicious! To give the "pulled pork" texture, there are carrots mixed in with the bbq sauce and tempeh mixture....genius!! I love slaw on sandwiches, to add that messy, crunchy, cool, tasty element to something warm and spicy. Yum!!! The sauce was the Memphis BBQ Sauce, also from Bianca's test recipes...very sweet and tangy, which is simply awesome!!!!Dessert was a Vegan Bakesale test recipe: Espresso-Chocolate Chip Coffee Cake, drizzled with Chocolate Ganache. Ooooooh my goooosh was this good!!! A great balance of cakey-ness and crumbliness in the cake portion, perfect Coffee Struesel Topping (!!) and double perfect chocolate-y goodness poured all over the top. And it was not too sweet at all, which can sometimes happen in a lesser coffee cake. This was, of course, enjoyed with some fair trade, locally-roasted Broadway Cafe Coffee! Yay for good dessert and good coffee!Another test recipe from Vegan Bakesale I made this week was the Spelt Jam Thumbprint Cookies. The dough has jam baked into it and is made with spelt flour, so it has a very distinct flavor that is almost healthy tasting...and it's good! Then, there's the double whammy of jam (jammy? no, too much.) in the thumbprint. These tasted a bit like the Girl Scout Cookies that had raspberry jelly in them, but better of course! :)

Keeping it on the DL...KC Vegan Crawl!!

This past Sunday commemorated something very special and pretty DL...I started an underground restaurant out of my apartment!! I still need a name, but it is every Sunday from 11 am to 8 pm, and I will be serving one big meal and an awesome dessert, all for under $8! I have been working on the concept and details for about 3 months or more, and it was wonderful to see my hard work come to fruition last weekend. It was crazy to open VegNews this month and there was an article about the exact thing I had been planning for months! Vegans be workin' so harrrrrd! Turnout was pretty small, but I am hoping it will get bigger every week. This all relies on word of mouth, people! If you are in Kansas City or the Missouri/Kansas area, come by! Send me a message and I can give you the details.

For the first week, I made one of my absolute FAVORITE meals: BBQ seitan with all the fixin's. BBQ Seitan (with homemade seitan and homemade bbq sauce), Organic Baked Beans, Whole Grain Cornbread, and Sauteed Local Greens with Garlic (and Hot Sauce!). Soooo comforting and delicious!! Everyone loved it, of course!


And for dessert, I made Oatmeal Butterscotch Pecan Cookies! I made a modified version of my recipe I posted a few months ago....and they were even better than I remembered! Perfection.And just to show you how awesome and veg-friendly Kansas City is...my friend, Dane, is also doing a vegan dinner out of his house every Sunday night, currently called "Sustainability Sundays"! His starts after mine, so it is all friendly between us :) His angle is sustainability in growing, purchasing, and preparing foods, all with vegan ethics in mind. So great! I just had to use this blog to give him vegan props!

This week, he made Local Fruit Pasta with Tomato-Peach Marinara, with local Ciabatta Bread. Not pictured was a Spinach and Berry Salad and Strawberry-Apricot Oatmeal Cookies. He uses basically 99% local ingredients, except stuff like some spices and oil, which is just fantastic! Dane even distributes some literature on sustainable living each week! yay!
So last weekend was the first KC Vegan Crawl, with my place open 11-8 and Dane's 8-11. How could you beat that?! So cheap, so local, so vegan, so good! GO KC!!

Craving Some Soul Food

Some things are just good for your soul. For example, my soul was absolutely ecstatic on Tuesday night when Barack Obama became our next president!!!! Perhaps it was due to his awesome-ness, his amazing staff's work, or my cooking?! I did make those lucky black-eyed peas, you know! I also made these Barack Obama Cupcakes!! As good as these were, I guess he deserved his win from his own merit....

These are the Pumpkin-Chocolate Chip Cupcakes from Vegan Cupcakes Take Over the World, topped with a Maple-Cinnamon Buttercream that I whipped up...and they are blessed with little Obama cupcake toppers, courtesy of Natalie at Bake and Destroy!! These were a perfect way to celebrate a victory! Oh, and the pumpkin puree used in these was some I made myself from a locally-grown pumpkin courtesy of the Columbia Farmer's Market and Steven! yay DIY! These not only tasted amazing, they were life-CHANGING! :)

Another thing that is good for your soul: SOLE food! This is a culinary ideology and, more recently, a trend where consumers are beginning to desire foods to eat/purchase that are: Sustainable, Organic, Local, and Ethical. I hope this is not just a hip trend for eaters, but that it becomes a way of life for people everywhere. Here are a few meals we had this week that were both in the area of soul foods and SOLE foods!

What's In My Freezer? What's for Dinner? Why So Many Questions?!

Welcome to Day #23 of Vegan MoFo! First of all, I have to bare a little bit of my self: my freezer! Sassy over at Vegan Coach has tagged me to reveal the inside of my icebox! The Door: Smart Deli Vegan "Pepperoni," Health is Wealth Chicken-less Patties, Vegetable Potstickers, Rising Moon Artichoke-Olive Ravioli, Dairy Free Pesto, A Loaf of Uprise Bread, Earth Balance Shortening, Rolls from Uprise, A Bag of Local Chestnuts, and Baking Soda. Exciting, I know.
The Innards: Leftovers, Sprouted Grain Bagels, A Frozen Banana, Frozen Pumpkin Puree (I made it myself!), Organic Beans, Sunshine Burgers, A Loaf of Uprise Rye Bread, Flaxseeds, Red Raspberries, More Uprise Rolls, A Giant Bag of Seitan, Ezekiel Cinnamon Raisin English Muffins, Artichoke Hearts, Rice Dream Neapolitan Ice Cream...not pictured: frozen corn, hominy, and a carton of my homemade ginger-apple spice-cream. It is packed!
For dinner, I had to make something really delicious for Steven and I because I am leaving tomorrow to go to Chicago for a whole week....I am going to the American Dietetics Association annual national conference, since I am a dietetics student and will be graduating in May...anyway, I figured I had to leave him with a tasty memory of me for the week!
I made BBQ seitan with a homemade barbecue sauce, garlic-mashed organic potatoes, and sauteed greens:
We also had Uprise Bakery rolls with....drumroll....APPLE BUTTER that I made yesterday (yeah crock pot!) from the apples I picked with Steve! I made it with maple syrup, cinnamon, nutmeg, and cloves...and it was wonderful! I wish fall could last FOREVER.

I Went Apple Picking!

You know it's fall when you finally get to go apple picking!!! Fall is my absolute favorite season...what's not to love?? Sweaters, beautiful weather, squash, apples, and bonfires. Perfect! On Sunday, I went with Steve and a bunch of friends to an orchard about 30 minutes outside of Columbia, and we picked a literal butt-load of apples! I could barely carry all of them! There are about 6 or 7 different varieties, too! This was so much fun...the perfect combination of celebrating fall and local food! Hooray! I, of course, want to bake with these bad boys, so I need your help! Any good recipes for desserts using apples? Help me out! :)

In other food happenings, we also had our traditional Sunday breakfast at Cafe Berlin this weekend! I had one of my favorites: the vegan breakfast burrito! This isn't on the menu, like the slinger I had, but Steve, Eli (the chef), and I came up with this as an amazing alternative to the breakfast burrito already on the menu...filled with meat and eggs and cheese. boo! This creation is a big tortilla filled with scrambled tofu, tempeh bacon, roasted red and sweet potatoes, cilantro, spinach, and a drizzle of maple syrup...served with a side of their homemade salsa! I always load mine with a healthy dose of hot sauce and wash it down with a biiiiiig 'ol mug of fair trade coffee! aaaahhhh perfection!Last night, I was feeling some comfort food, particularly some nice southern dishes. I had a few more ears of local corn and some local okra to use up, so I already had a good start on dinner! I made the Blueberry Chipotle BBQ Sauce from the PPK Blog and used it with sliced seitan(I even got to use up the last of my local blueberries in this dinner! score!). If you haven't made this, please please please do it! So sweet and spicy!!! I served it with ears of roasted local corn...slathered with Earth Balance and sea salt...homemade whole wheat biscuits, and my oven-fried okra. Outta this world! Steve couldn't stop raving, either! The okra tastes a lot like my grandma's real fried okra, but it is much, much healthier! Try it out next time you get okra from the market!

Oven Fried Okra (serves 2-4...depends on how much you like okra!)

1 lb fresh okra, sliced into 1/2" rounds

2 Tbs canola oil

1 tsp hot sauce

1/4 cup soy milk

1/2 cup cornmeal

1/2 cup breadcrumbs

1/2 tsp sea salt

1 tsp black pepper

1 tsp paprika

Preheat oven to 350 F. Spray a cookie sheet with non-stick spray. In a large bowl, whisk together the soymilk, oil, and hot sauce. Add in the okra and coat with liquid mix. Let sit for 10 minutes to absorb the liquids. Add in the dry ingredients, and stir to coat with dry mix. Spread okra in an even layer on the prepared cookie sheet and place in oven. Bake for 20 to 30 minutes, until coating gets crispy and brown, and you can smell the yummy okra. Serve warm with any of your favorite southern meals, especially bbq seitan :)

I may love the big city, but homestyle cooking is still one of my favorites!!

Labor Day Soul Food

With the blessing of having a day off of both school AND work (!!) I was able to prepare a real meal for a few friends and myself. Some good 'ol soul food was just what we needed, too!
I have been dreaming about the Blueberry Chipotle Barbeque Sauce that I saw on the PPK blog last week, and I just got a package of Soy Curls from my Pangaea order...the combination was just obvious to me! If you haven't made this super sweet and spicy and tangy and smoky sauce that Isa posted, then you must! immediately if not sooner! I'm sure it would go well on anything, like tofu or tempeh, but it went perfectly with the mildly-flavored and chewy-textured Soy Curls! Here they are up close and personal:

Blueberry Chipotle Barbeque Sauce (makes about 4 cups)
1 tablespoon peanut oil
1 small onion, finely chopped
3 cloves garlic, minced
1 inch chunk of peeled ginger, minced
2 cups blueberries
1/2 cup veggie broth or water
2 tablespoons ketchup
2 tablespoons soy sauce
2 to 3 teaspoons chipotle powder
1/4 cup molasses
2 tablespoons sugar (or more to taste)
Salt to taste

Preheat a sauce pan over medium heat. Saute the onions in the oil for about 10 minutes, until lightly browned. Add the garlic and ginger, saute for a minute more. Add the blueberries, veggie broth and soy sauce and bring to a boil. Once boiling, add the chipotle, molasses and sugar. Lower heat and let simmer for about 45 minutes, until it’s reduced by about half. It should be nice and thick. Adjust sugar and salt if you need to. Turn the heat off and let sit for about 15 minutes before using, stirring occasionally. (from Isa at the PPK blog)

I served the BBQ Soy Curls with some organic steamed kale and Mac'n' Chreese from Road's End Organics...whole wheat macaroni noodles+ nutritional yeast cheezy sauce= love! Herethey are in their lovely box, ready to be cooked:And here's everything all together... a perfect meal! A little taste of Southern-style food really is good for the soul :)
