KC Eats: Blue Koi!

So I have blogged before about some amazing places for vegans to eat in Kansas City...Blue Koi is one of the restaurants I have mentioned for its great vegan selection. But until last week, I hadn't even eaten there myself! Well, I went once and now I'm totally hooked!!! The staff is extremely knowledgeable about which items are vegan or could be made vegan, which makes me immediately feel at ease when I sit down to order. Also, tons of the menu items are already labeled vegan, which is even better!! The prices are in the 10-15 dollar range for an entree, but TRUST me on this, most of them are good for two meals. And I can eat a lot! So really, it's like 5 or 6 per meal...not too shabby considering this is some flippin' amazing, all fresh and homemade, pan-Asian food!!
I have now gone to Blue Koi twice in two weeks, and I plan on going much, much more!
On my first trip, I went with my friend, Chelsea...who is awesome btw :)

I got the Vegan Delight: a noodle soup in a sweet miso-ginger broth with carrots, cabbage, daikon, mushrooms, tofu knots, rice noodles, and fried tofu. Holy moly this was extremely flavorful, very mild in spice, and warming to the body and soul. I am in love with this dish. Perfect.Chelsea got the Ants on a Tree with Tofu: rice noodles stir-fried with tofu, cabbage, mushrooms, other veggies, and a spicy soy-based sauce. So, so good. It had a nice balance of heat, saltiness, sweetness, and savoriness. mmmm.....For our dessert, we split the Sesame Balls, the only vegan dessert Blue Koi currently has. It is basically a little mochi ball stuffed with red bean paste, coated in rice flour and sesame seeds and deep fried. So many good things all in one little ball!!! Then, to go even more over the top, they give you their Sweet Plum Sauce to dip them in. Seriously like an Asian version of a jelly donut. I could not get enough!! And for being fried, they were not greasy at all! So light and airy and absolutely delicious. Best dessert from a restaurant I've had in quite a while! On my second visit, which was for lunch today, I took my mom since she had never been to Blue Koi before! Crazy!

She got the Tofu with Braised Mushrooms: Wheat noodles topped with a saute of mushrooms, fried tofu, and a savory soy-based sauce, topped with cilantro and scallions and served with a garnish of house-pickled cucumbers. So delicious. She was very, very pleased! Not spicy, but very flavorful and salty and goooood.
For my meal, I ordered the Tofu with Black Bean Sauce! I seriously think I almost passed out this was so wonderful!! It is fried tofu cubes (which were huuuuuge!), red and green bell peppers, mushrooms, garlic, and fresh jalapeno stir-fried with a spicy and sweet black bean sauce. Served with perfectly sticky and fluffy all at once rice. yum. Just so, so, so many awesome flavors all together and perfectly executed. Not too greasy or sticky or any -y that it could have been. Divine is all I can say!! It made perfect leftovers for dinner tonight, too! Bonus!!
If you're ever in Kansas City or live nearby, Blue Koi is definitely a place you should check out! I don't think you'll be disappointed. Ever. At all.

(No Animals) Sufferin' Succotash!

Yeah, cheezy title. sorry. This post is aptly named because I discovered a new vegan-friendly restaurant in Kansas City today: Succotash! This was the first Saturday of the season that I went to the farmer's market in downtown KC, which was exciting in itself, but while I was there, I of course had to eat lunch! So when I saw Succotash, it was obvious what my job was. I had heard it was great before AND my mom had a gift certificate AND I was at the City Market, where it is located....how could I not eat there?? The restaurant is in a warehouse-type space and it is decorated really cool, lots of bright colors, paintings, retro lamps, etc.....Also, they have great food! The Pitch voted them best breakfast in Kansas City! I wouldn't say this applied to vegans, as there weren't really many vegan breakfast items, but the lunch food was wonderful! About 90% of the people who worked there were really nice and helpful, but I guess you always remember the 10% that wasn't. Anyway, one of the girls who worked there was vegan, and she pointed out some options on the menu and substitutions and whatnot.

I had the Veggie Wrap: spinach tortilla stuffed with lemony lima bean hummus (subbed for the eggs and cheese. yuck.) , succotash, sun-dried tomatoes, and spinach, served with a HUGE side of home fries! This was amazing! The succotash was really crisp and flavorful, with tons of dill in it, and the lima bean hummus was amazingly creamy and fresh-tasting. I am in love!My mom had the Veggie Quesadilla: spinach tortilla with grilled succotash, tomatoes, spring greens, sun-dried tomatoes, and lemony lima bean hummus (subbed for cheese again), served with also a HUGE side of home fries. She really, really liked this, too! It was a lot like the wrap I had, since we made so many substitutions to make the items vegan, but we both loved what we had! And it was really reasonably priced! Yesssssss!While we were at the farmer's market, we picked up some Sweet Potato Pasta from Pappardelle's, a local pasta maker/vendor. They had a wide selection of pastas to choose from, but many of them had eggs in them. Luckily, they were really helpful in picking out which did not contain eggs, and I knew which one I had to have when my eyes landed on the words "sweet potato" and "pasta" since I am a carb lover and proud of it! Now I just need to figure out a meal special enough to use this in!We also stopped by a local natural foods store, Green Acres Market, to pick up a few groceries. While shopping, we discovered they had a new vegan item in their bakery: Vegan Chocolate Chip Raspberry Bars! I was pumped, because I love the raspberry chocolate chip blondies from VWAV, and these were inexpensive and already made for me! Lazy points! These were really good...not even close to as good as Isa's, duh....but quite tasty for a natural food store's bakery section! The crust was nice and dense and there was just the perfect amounts of both raspberry and chocolate. Very nice. In unrelated news, we had Waldo Pizza for dinner last night! Waldo is a KC local pizza place that has Follow Your Heart Vegan Mozzerella as a topping option, toooooons of veggie topping choices, and several vegan crust and sauce choices! They even sometimes have vegan cookies and brownies, but only if you go on the right day. Figures. We had the standard Veggie Pizza with Vegan Mozzerella...I added some Italian-Baked Tofu I made once we got it home, you know, for a litte more protein. It was so freakin' delicious!! The traditional crust is just the right thickness and it is soft and flavorful and crisp on the edges and perfect! It is nice to know you can always get a good vegan pizza in Kansas City!
Also eaten this week was my Green Tea-Almond Noodles! It's a recipe I have been working on and thinking about (you know how it is....) for a while now, and I think it is pretty much "there." This Asian-style dish is basically udon noodles, toasted almonds, veggies, and the Green Tea Almond Sauce (below), and it makes for a pretty quick and filling meal on a busy weeknight! This was a perfect pre-LOST treat!

Green Tea-Almond Sauce (makes approx. 2 1/2 cups)

2 cups water plus 2 bags green tea

1/4 cup cold water whisked with 2 Tbs cornstarch

1/4 cup soy sauce

1/2 tsp ginger powder

1/2 tsp garlic powder

1/4 tsp black pepper

1/4 tsp crushed red pepper (optional for extra heat)

1/4 tsp almond extract

1 Tbs maple syrup or agave nectar

2 Tbs Dijon or spicy mustard

Bring water to a boil and add tea bags. Remove from heat and let steep for 5 minutes. Remove tea bags return to medium heat. Add the cornstarch slurry and the rest of the ingredients and whisk constantly for about 5 minutes, until the sauce has thickened to a honey-like consistency. Toss with noodles, veggies, and almonds, and then serve hot or cold!

Mock Duck! And Foods From the Weekend

Tonight, Steve and I were adventurous and tried a new product that we found at our local Asian market, Chong's...Vegan Mock Duck! I had heard about this before, but was hesitant because I typically don't eat canned foods, and it sounded really bizarre, but I figured I should give it a shot!

The mock duck is made out of wheat gluten and seasonings, and it tastes slightly sweet and salty. It was actually really good! I liked the chewy texture (which freaked me out at first...look at the fake duck skin-looking piece! weeeeird, man!) and it had a lot of protein to keep me satisfied! I roasted it in the juices that were in the can along with it...and I served it with some Natto Chutney I bought at Clover's Natural Market:

To make a whole Asian-themed meal, I served the roasted mock duck with vegetable fried rice (loaded with local veggies and organic brown rice!) and sesame-glazed local green beans. This meal truly hit the spot, with the perfect balance of fresh from the veggies and savory from the sesame and mock duck! yuuuuuuum!!For lunch the other day, I used the Smoked Tofu from Tree of Life to make a TLT sandwich...a perfect way to celebrate local tomatoes while I still can! I of course spread it liberally with Vegenaise to make it a perfect sandwich!
This weekend, Steve and I visited my family in Kansas City. Lucky for us, one of my all-time favorite restaurants...which happens to be vegetarian...is in KC: Eden Alley! This wonderful restaurant is located on the Plaza, and focuses on healthy foods made from as many local and organic ingredients as possible. They also have an awesome selection of raw, soy-free, and gluten-free foods to meet everyones' needs! Eden Alley has really creative and eclectic menu items, and clearly labels which items are vegan or can be made vegan! That always makes me appreciate a restaurant more!! If you are ever in Kansas City, check this place out!!!
My mom had the corn fritters, which were topped with a smoky black bean sauce and a smoky chipotle aioli. Of course, she let me have a bite, and they were great! A southern feel and wonderful flavors made this so tasty...I want to learn how to make some like these!Steve had the sweet potato burrito, one of our favorite menu items! It is a big flour tortilla stuffed with hummus, brown rice, and roasted sweet potatoes, then topped with fruit salsa on a bed of greens. This is crazy good!!
I had the spinach-mushroom loaf with a side of roasted sweet potatoes...it was getting chilly out, so this seriously hit the spot!! For dessert, my mom ordered the vegan creme brulee! I had to try it, of course, and it was really nice...not too sweet or anything! And now I can cross that off my vegan 100 list :)
Steve and I both had the "Pollack cake," which was a coconut vanilla cake with chocolate chips, drizzled with vanilla and chocolate frosting. This was sooooo moist from the coconut and the frosting was so creamy and good! wow.

Sunday was my grandma's 69th birthday, and my family asked me to make the meal for her birthday dinner...I was honored! For the older crowd, I picked comfort food, with a healthy twist! They really liked it all, so I was pleased...

To start off the meal, I served a loaf of the 5 Olive Bread from Whole Foods: And we also had a nice green salad with sunflower seeds as an appetizer: For the main meal, I made garlic mashed potatoes (no gravy, sorry!!), olive oil-roasted green beans, and Chickpea Cutlets from Veganomicon...the ultimate in faux meats, I think! Everything turned out just wonderfully and we were all very satisfied:
But there was still room for dessert, of course! What would a birthday be without cake, I always say!! I wanted something simple, yet rich...with chocolate for my grandma! I made the Decadent Almond Cake from Hanna's My Sweet Vegan. oh lordy. make this cake for your next birthday. or any party really. or Monday. just make it! the almond flavor is soooo wonderful and it so moist and has a great mouth-feel. I made the ganache out of carob instead of chocolate, so I could force my family to be adventurous...and I loooooove carob!
I served the cake with Purely Decadent's Pomegranate Chip ice cream. No one would ever guess that this was not "real" ice cream, I swear! The fruity flavor was perfect and it went so well with the richness of the almond cake! A match made in heaven!The cake and ice cream together, the way it always ought to be!
